We are getting ready for our bees and making sure their home is ready for them. We wanted an English Bee Hive so we bought the boxes and built the roof for the top. Now all we have left to do is put the shingle on and then put the bees in it.

Mozzarella Cheese Recipe

1/4 tsp lipase powder, dissolved in 1/4 cup cool, unclorinated water and allowed to sit for 20 minutes
1/4 teaspoon liquid rennet diluted in 1/4 cup cool unclorinated water
1 1/2 level teaspoons citric acid dissolved in 1/4 cup cool unclorinated water
1 gallon fresh raw goat or cows milk
1 teaspoon cheese salt

Dissolve lipase, dilute rennet, and citric acid in separate bowls or cups. Place milk in stainless steel pot that has been sterilized. Bring milk slowly up to 55 degrees then add the citric acid solution and lipase. Mix well. Continue heating milk until it reaches 88 degrees and then add the diluted rennet stirring well. Continue heating until the temperature reaches 100-105 degrees. Turn off the heat. The curds should be pulling away from the sides of the pot and should look like thick yogurt. Scoop out the curds, with a slotted spoon, into a microwave proof bowl. Make sure you don’t drain all of the whey out of it. Add cheese salt. Microwave the curds on high for 1 minute. You can also do this on the stove in a pot and just heat it and knead it until it is stretchy. If using the microwave, heat two more times for 35 seconds each. Keep kneading until it looks really elastic and shiny. At this point you can roll it into a ball and enjoy or put it in a zipper bag and place in the refrigerator. Yield is about 1 pound. Oh my gosh! What an exciting day it was! First of all, I made another batch of mozzarella cheese, just because it is fun, and then we went to the Co-op to take photo’s of the display. Aren’t they awesome!

We made mozzarella cheese with our lovely goat milk and it came out perfect! Yay! Then I made chicken parmesan and melted this lovely cheese over the top….. absolutely wonderful! I just love being a farmer ❤

 

 

Chocolate Fix~ Yum

Chocolate~Chocolate Chip CookiesWell, the goats and chickens are in bed and our day is coming to a close so it is time for a bit of a chocolate fix! I found this awesome recipe somewhere on the internet… can’t remember where, but man they are awesome. Here is the recipe:

Killer Chocolate-Chocolate chip cookies
4 ounces cream cheese softened
3/4 cup butter softened
1 cup brown sugar (packed)
1/2 cup granulated sugar
2 tsp vanilla
1/2 cup cocoa
1/2 tsp baking soda
1/4 tsp salt
1 1/2 cup all purpose flour
Mix cream cheese and butter; blend well. Add sugars and vanilla and blend well. Add cocoa mix well. Add flour, baking soda and salt and mix well. Spoon onto cookie sheet lined with foil or silpat. Bake at 375 degrees for about 10-12 minutes or until they look like the picture 🙂

Busy Spring days on the farm~

We had a very productive day here on the farm today! First of all we got 70 ounces of milk this morning from our two girls! That is a record! What awesome girls ♥ After we got done milking and feeding everyone, I ordered our bee packages so we can have our own honey. Then I started a batch of liquid castile soap. What an interesting process that is. It is a bit similar to making bar soap, but it has to cook for several hours in order to get to the right stage before it is done. I just finished making it and it looks really good. I will take pictures and post them as soon as it is done curing….. likely a week from today. The scents are Lavender/Rosemary and Silken Splendor. I really like how it came out so I will likely start making lots of it and also shampoo.

Last night was better for Honey and Daisy Mae in their new house. There was very few times during the night that they made any noises, and even then it was only for a minute or less. Sugar hollered a couple of times, but nothing really substantial. Starr never made a sound all night which was really good. Honey was a bit hoarse this morning, but she sounded better by the time we put them to bed. They seem to be getting used to the new situation. They are such sweeties ……

Today was one of the most exciting days to date since we started making soaps! We have been sending soaps here and there and everywhere because we think they are the best soaps ever! Now we are going to have the chance to sell them in a store! Our awesome friend at Our Old Place Farm spoke to a lady at a local store and she is going to carry our soaps! Is that the most awesome thing ever or what?!!! I am so excited! We have been packaging soap and getting ready… we will be going to drop them off tomorrow morning! How exciting!
