Chocolate~Chocolate Chip CookiesWell, the goats and chickens are in bed and our day is coming to a close so it is time for a bit of a chocolate fix! I found this awesome recipe somewhere on the internet… can’t remember where, but man they are awesome. Here is the recipe:

Killer Chocolate-Chocolate chip cookies
4 ounces cream cheese softened
3/4 cup butter softened
1 cup brown sugar (packed)
1/2 cup granulated sugar
2 tsp vanilla
1/2 cup cocoa
1/2 tsp baking soda
1/4 tsp salt
1 1/2 cup all purpose flour
Mix cream cheese and butter; blend well. Add sugars and vanilla and blend well. Add cocoa mix well. Add flour, baking soda and salt and mix well. Spoon onto cookie sheet lined with foil or silpat. Bake at 375 degrees for about 10-12 minutes or until they look like the picture πŸ™‚

Ricotta Chocolate Cake

It is only fitting that when we make our goat milk ricotta, and collect our eggs that we tell people how to use those ingredients in awesome ways. This recipe for ricotta chocolate cake has a texture more like a brownie and melts in your mouth. I added some luscious buttercream frosting, just for fun, and wow, talk about delish! I hope you like it πŸ™‚

 

Ingredients:
6 tablespoons cocoa
5 tablespoons boiling water
7 ounces ricotta cheese
4.5 ounces softened butter
5 ounces sugar
1 teaspoon vanilla
3 eggs
5.1 ounces of all purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda

Preheat oven to 350 degrees. Spray 8″ square pan with cooking spray.
Mix the cocoa into the boiling water and set aside. Place ricotta in the bowl of a food processor and mix till creamy. Add butter mix again. Add sugar, vanilla and eggs and let mix till fluffy. Add the flour, baking powder, and baking soda and mix; while the blades are mixing pour in the cocoa/water mixture and let it mix until it is incorporated well. Pour into pan and bake until wooden pick inserted into the center of the cake comes out clean, about 30 minutes.
