News from the farm ~ Bella and her babies <3

What a day we had here on the farm! Bella and her babies were integrated into the herd successfully!! Bella is such a good mama that she made sure her babies were safe from harm all day ♥ Her and Starbright had it out first thing so that there would be no herd queen issues. That was an interesting altercation for sure. I think Bella just wanted Starbright to understand that the babies were more important than who the leader of the herd is. Daisy and Honey were really interested in these new babies and were intercepted by mama Bella several times. I am so happy that all went well and babies and mama are back in their side of the house to spend the night ♥
Tomorrow will bring lots of work including a chicken tractor being built and bee hives put in place and made ready for the new bees arrival.
Well, I am exhausted, so I will see you all tomorrow….. good night all…. sleep well my friends ♥

Hi All! Well, last night was a long one! Bella, our Alpine doe, had her baby buckling at 1:26 am this morning and the baby doeling shortly their after. We were out in the goat barn until after 3 am making sure everyone was dry and doing well. So needless to say we are bushed and in dire need of a good night sleep! Here are some pictures of our little ones….

Mozzarella Cheese Recipe

Mozzarella Cheese Recipe

1/4 tsp lipase powder, dissolved in 1/4 cup cool, unclorinated water and allowed to sit for 20 minutes
1/4 teaspoon liquid rennet diluted in 1/4 cup cool unclorinated water
1 1/2 level teaspoons citric acid dissolved in 1/4 cup cool unclorinated water
1 gallon fresh raw goat or cows milk
1 teaspoon cheese salt

Dissolve lipase, dilute rennet, and citric acid in separate bowls or cups. Place milk in stainless steel pot that has been sterilized. Bring milk slowly up to 55 degrees then add the citric acid solution and lipase. Mix well. Continue heating milk until it reaches 88 degrees and then add the diluted rennet stirring well. Continue heating until the temperature reaches 100-105 degrees. Turn off the heat. The curds should be pulling away from the sides of the pot and should look like thick yogurt. Scoop out the curds, with a slotted spoon, into a microwave proof bowl. Make sure you don’t drain all of the whey out of it. Add cheese salt. Microwave the curds on high for 1 minute. You can also do this on the stove in a pot and just heat it and knead it until it is stretchy. If using the microwave, heat two more times for 35 seconds each. Keep kneading until it looks really elastic and shiny. At this point you can roll it into a ball and enjoy or put it in a zipper bag and place in the refrigerator. Yield is about 1 pound. Oh my gosh! What an exciting day it was! First of all, I made another batch of mozzarella cheese, just because it is fun, and then we went to the Co-op to take photo’s of the display. Aren’t they awesome!

We made mozzarella cheese with our lovely goat milk and it came out perfect! Yay! Then I made chicken parmesan and melted this lovely cheese over the top….. absolutely wonderful! I just love being a farmer ❤

We had a lovely, although very busy, day yesterday! The people at the Co-op were so wonderful and enthusiastic about our soaps! We also dropped off some samples to some of our friends, so it was a very productive day! The babies slept very well last night and not a peep out of them until almost 7:30am. That is very encouraging and it is nice to get a good sleep in without being awakened by sad baby goats….. ♥
I have posted this picture of the eggs to show the difference….. someone had a hard time with that big one…. yikes! It was not a double yolker though. Our girls are doing a great job giving us lots of lovely eggs!
We will be making cheese today; the milk is beginning to build up…. Yay!

Chocolate Fix~ Yum

Chocolate~Chocolate Chip CookiesWell, the goats and chickens are in bed and our day is coming to a close so it is time for a bit of a chocolate fix! I found this awesome recipe somewhere on the internet… can’t remember where, but man they are awesome. Here is the recipe:

Killer Chocolate-Chocolate chip cookies
4 ounces cream cheese softened
3/4 cup butter softened
1 cup brown sugar (packed)
1/2 cup granulated sugar
2 tsp vanilla
1/2 cup cocoa
1/2 tsp baking soda
1/4 tsp salt
1 1/2 cup all purpose flour
Mix cream cheese and butter; blend well. Add sugars and vanilla and blend well. Add cocoa mix well. Add flour, baking soda and salt and mix well. Spoon onto cookie sheet lined with foil or silpat. Bake at 375 degrees for about 10-12 minutes or until they look like the picture 🙂

We are busy packaging soaps for the Co-op Country Store in Ponderay…… Yay! They will be selling our soaps beginning tomorrow! They have also requested liquid Castile soap! Yay again! There will be an entire end cap featuring all of the locally crafted items….. that’s where our soaps will be showcased! We are so excited and thankful for this awesome opportunity! The package is all ready to go for tomorrow! ♥
