Delicious Gluten-Free Banana Bread

Hi Everyone! Well, we have decided that we are sensitive to gluten, so we are now experimenting with gluten free cooking! It is really different! Even though I have been a chef/baker for many years, I was very unfamiliar with baking with gluten free ingredients. So, this is quite an adventure for me as well as my family as we try to make foods that taste like what we are used to. It is really awesome when a recipe comes out so awesome that you would never know it was gluten free! That is the case with this totally beautiful Banana bread that I made today. Gluten Free Banana Bread

3 bananas (really good and ripe)
4 large eggs
1 ½ Tablespoons vanilla
2 Tablespoons Honey
½ cup melted butter (you could also use coconut oil or another oil of your choosing)
1 cup Almond meal
1 ½ cup Gluten free flour* (you can make your own using the recipe below or you can buy premade Gluten free flour at most grocery stores)
1/3 teaspoon salt
1 ½ teaspoon baking soda

Place all dry ingredients into food processor, pulse to mix. Add all the rest of the ingredients and pulse till well blended. Pour into buttered or pan sprayed loaf pan. Bake at 350 degrees for 55-65 minutes or until pick inserted comes out clean.

*Gluten free flour mix:

300 grams brown rice flour
250 grams Sorghum flour
150 grams Tapioca flour
100 grams Sweet rice flour (I used white rice flour)
100 grams Potato flour
100 grams Corn Starch
50 grams pectin

Mix all together and store in a Ziploc bag.
